Spice it up! How to Make a Flavorful Aloo Gobi Masala


Aloo Gobi is a popular dish from India that is made with potatoes (aloo) and cauliflower (gobi). It is a flavorful and easy-to-make dish that can be served as a side or as a main course.


Ingredients:


  • 1 head of cauliflower, chopped into small florets
  • 2 medium potatoes, peeled and diced
  • 1 large onion, finely chopped
  • 2-3 cloves of garlic, minced
  • 1-2 inches of ginger, grated
  • 1-2 green chilies, finely chopped (optional)
  • 1 teaspoon cumin seeds
  • 1 teaspoon mustard seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1 teaspoon cumin powder
  • Salt, to taste
  • 2 tablespoons vegetable oil or ghee
  • 1 cup water
  • Fresh cilantro, chopped (for garnish)


Instructions:


  1. In a large pan, heat the oil or ghee over medium heat. Once hot, add the cumin seeds, mustard seeds, and let them sizzle for a few seconds.
  2. Add the chopped onion, minced garlic and grated ginger, sauté until the onion is translucent.
  3. Add the diced potatoes and sauté for a few minutes, until they start to turn golden brown.
  4. Add the chopped cauliflower, green chilies (if using), turmeric powder, coriander powder, cumin powder and salt. Stir well to combine.
  5. Add 1 cup of water, bring to a boil and then reduce the heat to low. Cover the pan with a lid and let the vegetables simmer for 10-15 minutes or until they are cooked through. Stir occasionally.
  6. Once the vegetables are cooked, turn off the heat and let it cool for a few minutes.
  7. Garnish with fresh cilantro and serve hot with chapati, naan, or rice.
  8. This dish is a perfect balance of spices and vegetables, making it a delicious and healthy meal. It can be enjoyed with rice, naan, or chapati and can be garnished with fresh cilantro for added flavor and color.
